Blueberry & Pecan Baked Oatmeal



A great way to feed a crowd, baked oatmeal provides an easy to prepare brunch item the whole family will love. The oatmeal dish is versatile to suit your preference; substitute the blueberries for apples or strawberries, use either fresh or frozen fruit. This dish preps in under 10 minutes and then is hands off baking for about 45. Enjoy!

Makes 8 servings

Preparation Time: 10 minutes

Cook Time: 45 minutes



Ingredients:

*2 cups old fashioned rolled oats

*1/2 cup + 1/2 cup pecans, chopped

*1/2 cup brown sugar

*2 teaspoons cinnamon

*1/2 teaspoons salt

*1 teaspoon baking powder

*2 cups + 1/2 cup of blueberries

*2 eggs

*1 teaspoon vanilla extract

*1 3/4 cups milk

*4 tablespoons butter, melted


Preparation:

*Preheat oven to 350F.

*Grease a 6 quart pan with butter and set aside.

*In a large bowl combine oats, 1/2 cup pecans, brown sugar, cinnamon, and salt. Stir well.

*In another bowl whisk the eggs, then add vanilla extract, and milk. Whisk to combine.

*Pour egg mixture and melted butter into the bowl with the oats. Stir well.

*Place 2 cups of the blueberries in an even layer at the bottom of the greased pan.

*Pour the oatmeal mixture over the top and spread.

*Sprinkle the remaining 1/2 cup of blueberries and 1/2 cup of pecans over the top.

*Bake for 45 minutes until pecans are toasted and the mixture has set.
