Chopped Salad Taste Test

This savory salad is zesty and flavorful. However, as you are preparing the dish I recommend tasting each individual ingredient. I did not taste my onion before tossing the salad and it was more pungent than usual, leaving me picking through my salad to remove some of the spicy vegetable. As long as you taste as you go and adjust your ingredients a bit accordingly, you will be left with a tasty dish!

Makes 5 servings

Cook Time: 10 minutes

Ingredients:

*10 ounces chopped romaine lettuce (about 2 medium or 3 small heads, chopped)

*1/2 medium head of radicchio, finely chopped (about 2 cups)

*1/2 medium red onion, chopped (about 1 cup)

*2 stalks celery, chopped

*1 pint cherry tomatoes, thinly sliced

*⅓ cup stemmed and thinly sliced pickled pepperoncini peppers

*⅓ cup oil-packed sun-dried tomatoes, rinsed and roughly chopped

*1 can (15 ounces) chickpeas, rinsed and drained, or 1 1/2 cups cooked chickpeas

*1 cup (4 ounces) . inch cubes of provolone cheese (optional)

*Store-bought Italian vinaigrette dressing of your choice


Preparation:

*In a large serving bowl, combine the chopped lettuce, radicchio, onion, celery, cherry tomatoes, peppers, sun-dried tomatoes, chickpeas and cheese.

*Toss the ingredients together and set aside.

*Serve with dressing on the side.
