Peach & Feta Salad


Happy Foodie Friday! This week we are highlighting peaches in this bright summer salad. If you are looking for a tasty salad with tons of different flavors, the combination of feta and pecans pairs beautifully with the sweetness of the peaches. The homemade balsamic vinaigrette is easy to throw together and tastes great with all of the other ingredients.


If you want to switch up the flavor profile of the salad you could substitute dill for the basil. Another tasty substitute would be using red wine vinegar instead of balsamic in the dressing. If you like things on the sweeter side add a little more honey to the dressing. Overall, this salad is a fresh and delicious combination of flavors that is sure to be a crowd hit!


Peach & Feta Salad

Makes 4 servings

Preparation Time: 15 minutes


Salad Ingredients:

*2 peaches

*1 small box (5 ounces) of arugula

*1 small box (5 ounces) of spinach

*2/3 cup chopped pecans

*4 ounces feta cheese

*1 tablespoon chopped basil


Quick Balsamic Vinaigrette Ingredients:

*1/4 cup extra-virgin olive oil

*2 tablespoons balsamic vinegar (or vinegar of choice)

*2 teaspoons honey

*1/2 teaspoon of Italian seasoning

*Sprinkle of salt + pepper to taste


Preparation of Vinaigrette:

*Combine all ingredients in a measuring cup or bowl.

*Use a small whisk to stir all ingredients until well mixed.

*Taste and adjust to personal preferences, add more vinegar for tang, mustard for body, or honey to sweeten.


Preparation of Salad:

*Cut peaches into bite sized pieces.

*In a large bowl add arugula, spinach, peaches, pecans and basil.

*Crumble goat cheese over top and toss ingredients together.

*Pour dressing over mix and toss until everything is well coated.

*Enjoy!
