Sage Chicken Meatballs



A tasty take on a traditional meatball recipe, sage brings a whole new depth of flavor to this dish. When paired with parmesan sage orzo and some roasted vegetables you have a delicious and nourishing meal. Please enjoy and take my advice, make some extra for leftovers! These meatballs also freeze incredibly well, up to 3 months, for an easy dinner in the future.

Makes 6 servings

Preparation Time: 15 minutes

Cook Time: 25 minutes



Ingredients:

*1 teaspoon ghee

*1 shallot, minced

*2 pounds ground chicken

*2 eggs, beaten

*1 tablespoon olive oil

*1 cup panko breadcrumbs

*3/4 cup grated parmesan

*1 teaspoons dried oregano

*1 teaspoon sage powder

*2 teaspoons salt

*1/2 teaspoon pepper


Preparation:

*Preheat oven to 400 F. Line a baking sheet with parchment paper or a silicon liner.

*In a large bowl combine the chicken, egg, olive oil, breadcrumbs, parmesan, oregano, onion powder, sage powder, salt, and pepper. Stir until just mixed.

*Form the mixture into 1 1/2 inch balls and place on the prepared baking sheet.

*Bake for 20-25 minutes until fully cooked.

*Serve with parmesan sage orzo for a delicious meal.
